We asked our Award-winning chef Louise McCrimmon to tells us about June's Supplier of the Month.

One of my greatest pleasures is to visit my producers directly, to understand their passion and to pass that on to our customers. For June, Stream Farm comes under the spotlight.

Set in the beautiful Quantock Hills in Somerset, this organic farm is committed to seeing small scale farmers flourish. Bought ten years ago by Henrietta and James Odgers, the aim has always been to show that the British countryside is better served by lots of small farms selling produce directly to those who are going to eat it rather than a few huge farms selling to the supermarkets.

To that end, the couple have started a number of small businesses on their 250-acre farm with the intention of handing each one on, once it can be seen to be profitable and can earn a livelihood, to farmers who want to be part of the vision.

It is this vision that I have found so inspiring and having enjoyed tasting the farm’s produce it is easy to see how their lamb, beef, chicken and rainbow trout have all won gold, silver or bronze at the Taste of the West Awards over the last three years.

For June, our Second Floor menu will feature the fabulous Devonshire Gold chickens. Because they are reared with plenty of space to roam and eat natural organic food, their meat has a great depth of flavour. Also on the menu will be organic Hampshire Down lamb, which boasts a traditional full taste, alongside their line-caught organic trout.

Stream farm also supports an orchard of more than 900 apple trees with six varieties of apples producing a juice with a crisp and sophisticated taste.  This is available in both the Second Floor Bar and Restaurant.
