FOODIE FAVOURITE: TRETHOWAN'S DAIRY
“One of the greatest pleasures is to visit my producers directly, to understand their passion and to pass that on to our customers” enthuses Louise McCrimmon, our award-winning executive chef.
We're delighted she shares that passion too, as it means we get to enjoy delicious food from our prized local suppliers - and this month the spotlight is on the fabulous Trethowan’s Dairy.
Established in 1996 by Todd Trethowan, the local producer has spent the past ten years learning the art of cheese making with several leading British cheese makers. The cheese is produced at Gorwydd, the family farm, just outside the village of Llanddewi Brefi, in Ceredigion, West Wales.
Must try is Trethowan’s Gorwydd Caerphilly, a mature Caerphilly made to a traditional recipe using unpasteurised milk. The ingredients combined with working the curd by hand, keep the cheese true to the origins of traditional Caerphilly. It is matured on the farm for two months and exhibits a fresh lemony taste with a creamy texture to the outer.
